Berry Bruschetta

INGREDIENTS

  • Sliced French bread
  • melted butter
  • 1 cup cottage cheese
  • 1/2 tsp vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup slice strawberries
  • 2 tbsp balsamic vinegar
  • 1 tsp white sugar
  • 1 tsp fresh mint, chopped

STEPS

  1. Preheat oven to 400 degrees
  2. Arrange bread slices on a single layer on a baking sheet
  3. Brush with melted butter. Bake until lightly golden
  4. Combine cottage cheese, cinnamon and vanilla extract. Stir well
  5. In a separate bowl, stir fruit with balsamic vinegar, sugar and mint.
  6. Spread 1 1/2 tbs cottage cheese mixture over each bread.
  7. Top with 1 1/2 tbsp of fruit mixture
  8. Serve immediately
